SOUR CREAM RAISIN BARS for a special treat
This recipe came from my Mother-in-law, Lillian Williams. If you recall from an earlier post, Lillian is the person who had the amber beads from Denmark that I received after she passed.
I have so many great memories with Lillian; in that previous post I wrote that her only child (who died as an infant) and I shared the same birth date. That was a true bond for Lillian and me. Lillian was a wonderful (I must repeat) wonderful cook. I did get a good number of her recipes. This recipe for bars is just one of the many.
Lillian had a very unhappy marriage when she was a young woman. After it ended she raised four children whose mother had died in childbirth. When those children were raised her job was over but they all kept in close communication even after she married my father-in-law. She was quite a lady. Totally respected by everyone.
Well, here is the recipe:
1 ¾ C. oatmeal 1 tsp. soda 1 ¾ C. flour 1 C. butter, melted 1 C. brown sugar
Combine oatmeal, flour, brown sugar, and soda; blend well. Add melted butter and mix thoroughly.
Pat ⅔of the mixture into the bottom of a 9 X 13 pan. Bake 13 to 20 minutes in 350° oven.

In a saucepan combine the following and bring to a boil. Reduce heat and boil 5 to 10 minutes (until thickens) stirring often.
4 egg yolks, slightly beaten 2 C. raisins 1 TBSP. cornstarch 1 1/2 C sugar 2 C. sour cream
- Pour over bottom baked mixture
- Cover with remaining ⅓ of crumbs. - Bake 20 minutes in 350° oven.

Bottom layer baked and out of the oven. The filling cooked to the thick stage - ready to pour onto baked mixture.

Right out of the oven - the bottom crust, the filling and the crumb top... now just wait to cool then cut into bars.
