OLD FASHIONED CREAMY RICE PUDDING
My friend/neighbor, Pam Erickson, posted this recipe on her Facebook page today. I asked her if she had made it. She said no but she said that it reminded her of her mother's recipe. I decided to try it; it is so very very good.
I delivered the finished product to Pam and hope that she and her family will enjoy it as much as she enjoyed her Mom's.
Pam is a woman devoted to her family plus she and her husband do so much for this community. They are diligent and dedicated volunteers for every community event.
instructions with Ingredients:
#1. Combine cooked rice, 1 1/2 cups milk, and salt in a saucepan over medium heat; cook and stir until thick and creamy, 15 to 20 minutes.
1 1/2 cups cooked rice 1 1/2 cups milk 1/4 teaspoon salt
#2. Stir, the following into the rice mixture; stirring continually 1 egg, beaten 1/2 cup milk.
2/3 cup raisins (optional)
1/3 cup white sugar #3
Continue cooking until egg is set, 2 to 3 minutes.
Remove saucepan from heat; stir following into the pudding 1 tablespoon butter 1/2 teaspoon vanilla extract
