FALINE’S CHICKEN BAKE

On a very stormy day one April when we lived in Iowa we received a telephone call from our son, Dennis. His wife was in a very serious medical condition with the delivery of their third child. They lived in Fayetteville Tennessee but had to go to the Vanderbilt Hospital in Nashville because of the situation. It was difficult to be so far away but somehow they managed without us. Our newborn granddaughter was in critical condition when she finally entered the world. Doctors had to replace all of her blood and her liver was quite enlarged. It took a lot of prayers, good doctors & nurses and a good amount of time for both of them to get to 100% healthy. Faline grew into a wonderful young girl and woman. She is now married and has two healthy beautiful children. After our son and his family moved back closer to us I was able to spend a lot of time with Faline (and her brother & sister). I’ve always referred to her as my ‘Angel from Heaven’. I don’t get to spend much time with them now because we all live in different states but we do keep in touch via phone calls..

Faline and I were on the phone one day when she said she had to go fix dinner. I asked what she was preparing and she shared this very easy, fast and delicious recipe. It sounded good to me so I fixed it for our dinner that evening and I’ve prepared it many times since – in fact just yesterday again.

  • Place chicken breasts in a baking pan

  • Cover with pats of butter

  • Squeeze fresh lime juice over the top

  • Add seasonings

Bake in 350° oven for 45 minutes (I use the chicken breast filets from Schwans most of the time)

"Seeing your granddaughters recipe for chicken made me think of a chicken recipe I use often.


3 cups of red potatoes quartered

2 cans green beans, drained

4 boneless chicken breasts

3/4 stick of butter

2 Italian dressing seasoning mix packets

Preheat oven to 350

Place chicken down the middle of baking pan

Put green beans down one side of chicken

Place potatoes down the other side of chicken

Cut butter layer over all three

Sprinkle dressing over the entire pan

Cover with foil and bake 1 hour

Note - I usually only use 1 seasoning packet

Can use broccoli or asparagus instead of green beans.  Can also substitute pork chops instead of chicken.

Totally easy delicious pasta for dinner

This recipe on Facebook caught my interest. It had a demo video attached to it! I quickly wrote the recipe on a piece of scrap paper - and picked up the ingredients next time I went grocery shopping.
