WONDERFUL BANANA NUT BREAD
Elizabeth Biggs’s BANANA NUT BREAD
Elizabeth was mother-in-law (aka Mrs. Clean!!!). Everything in her house was thoroughly cleaned EVERY Saturday! The furniture was all turned upside down to clean, the kitchen and bathroom tiled walls were washed, the window sills were washed and rinsed…. you get the idea, right? She worked outside the home so the cleaning and baking were always done on Saturday. I can remember her stirring food, cleaning, etc with a cigarette positioned between her lips with one eye kind of squinted to avoid the rolling smoke from getting into it… I used to think that the ashes would fall into the food or onto the floor but it never happened. She was a great cook and I loved her Banana Bread….
MIX together until well blended:
½ c. shortening
1 c. sugar
2 eggs
ADD
2 TBSP sour milk
1 c. mashed bananas
SIFT TOGETHER THEN ADD TO ABOVE
2 c. flour
2 tsp. baking soda
½ tsp. salt
ADD
1 c. chopped nuts
POUR INTO WELL GREASED LOAF PAN – let stand for 20 minutes before baking
BAKE in 350° oven for 1 hour
