HEALTHY SNACK

I appreciate my reflexologist (Patti Vig). Soon after getting the reflexology treatments from her, I realized that I would rather have my feet rubbed than any other like thing such as a back rub. Patti quickly became a good friend after several treatments. My sister feels the same as I about the pleasure and relaxation from reflexology so she went with me last time I was privileged to get a treatment. Patti shared a recipe with us for what she calls a HEALTH FOOD SNACK. Both my sister and I have prepared this recipe more times than once since then; today I decided to share it on my blog... so here goes. Get ready for a great snack that just can't have many calories and It is satisfying enough that at times I've used several pieces for a meal substitute.

Ingredients:

  • 3 c quick oatmeal

  • 1 c brown sugar - packed

  • 2 tsp baking powder

  • 1 tsp salt

  • 1/2 tsp cinnamon (or more)

  • 2 large eggs - beaten

  • 1 c fat free milk

  • 1/2 c butter - melted

  • 3/4 c tart apples - peeled & chopped

  • 1/3 c peaches - fresh or frozen - chopped

  • 1/3 c blue berries - fresh or frozen

  1. Preheat oven to 350 degrees.

  2. Coat 8 X 10 baking dish with cooking spray Combine oats, sugar, baking powder, salt and cinnamon - mix well

  3. Beat eggs well; mix milk and melted butter with beaten eggs

  4. Stir in fruit

  5. Pour prepared baking dish - BAKE 35 minutes (or until browned on top)


NOTE: This is 1/2 the recipe. You can use any fruits of your choice....but it is truly very good. Invite your neighbors in for a cup of coffee or tea and some healthy snacks.
