Banana Chocolate Chip Muffins

This recipe is in honor of my son-in-law (Svigersønn in Norwegian) Larry Torgerson.



Larry was absolutely a wonderful son-in-law who loved and cared for my daughter and their family with everything he had in him; he was a devoted family man. Four years ago, Larry had a liver transplant which was followed by other health issues. We lost him just over one week ago.


I asked for this recipe from a friend after her husband shared the following story:

(Note: & Leanna were part of the camping group with Larry and my daughter.) “One camping weekend Larry ate one of Leanna’s muffins. We knew that he really liked them because he stopped by our camper later that day and asked “are there any of those muffins left?” Then sometime later that same day he stopped by again and asked the same question again. It was obvious that he liked them a lot more than I did so I said, “Just take the whole bunch Larry!”


Larry’s favorite baked goodies were cookies; he even baked cookies for himself. He also loved pecan pie (and obviously banana chocolate chip muffins). He was a master with smoking and roasting meats. He was our family’s chef for more holidays than I can remember. And besides being a great cook, Larry always demonstrated compassion and was never judgmental. We will always and forever miss him.

(After I finished baking these muffins, I realized that I hadn’t added the ½ cup of mini chocolate chips!!!! – Larry would have laughed!!!) So, when you make these, make sure you add the chocolate chips at the end!)


Ingredients: 2 cup flour 1/2 cup soft butter 1 tsp baking powder 1/2 cup brown sugar

1 tsp baking soda 1/2 cup sugar

1/2 tsp salt 2 eggs

3 ripe bananas 1/2 cup mini chocolate chips

1 tsp vanilla

1 TBSP milk

Instructions:

Pre-heat oven 325 degrees

In small bowl stir together flour, b-powder, soda & salt

In small bowl mash bananas; add vanilla & milk Using mixer, cream sugars and butter 'til fluffy (3-4 minutes)

Add eggs; then banana mixture; then dry mixture; then chocolate chips

Line muffin tins with papers and butter no-stick spray

Bake 22 - 27 minutes.



Muffins just out of the oven WITHOUT the mini chocolate chips!!!! (They still taste good.)

Totally easy delicious pasta for dinner

This recipe on Facebook caught my interest. It had a demo video attached to it! I quickly wrote the recipe on a piece of scrap paper - and picked up the ingredients next time I went grocery shopping.
